SALAMI AND SWISS QUESADILLAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stolley Estate in Wills Point, Texas in 1982. Ingredients:
6 ounces deli salami thinly sliced |
1 small white onion thinly sliced |
1/4 cup green bell pepper chopped |
1/2 cup prepared medium salsa divided |
3/4 cup swiss cheese shredded |
4 large flour tortillas |
Directions:
1. Place onion and bell pepper in small microwave safe bowl. 2. Cover and microwave on high for 4 minutes stirring halfway through cooking time. 3. Stir in 3 tablespoons salsa and reserve. 4. Sprinkle equal amount of cheese evenly on each tortilla. 5. Arrange salami over cheese then top with equal amount of reserved vegetable mixture. 6. Fold tortillas over to close then heat nonstick skillet over medium heat for 5 minutes. 7. Cook two quesadillas in skillet 3 minutes turning once then repeat with remaining quesadillas. 8. Cut into wedges and serve with remaining salsa. |
