From the My Great Recipes collection. This is one of my favorites. I think it would be equally good without the salami (though I have never tried it that way). There is yeast in the dough, but no rising time.
Ingredients:
2 cups flour
1/4 teaspoon salt
1 tablespoon active dry yeast
1/2 cup warm milk (105 to 115 degrees f)
1 pinch sugar
2 tablespoons oil
1 egg, beaten
2 cups ricotta cheese
2 cups grated mozzarella cheese
1/2 cup romano cheese
1/2 cup parmesan cheese
1 cup salami, finely diced
Directions:
1. Combine flour and salt. Set aside.
2. In another bowl, dissolve yeast in the warm milk, sprinkling with a pinch of sugar.
3. Add the yeast mixture, along with the oil and egg to the flour. Mix together until dough is soft but not sticky. Set aside.
4. To make the filling, combine the remaining ingredients.
5. Cut the dough in half. Roll each half into an 11 circle. Place one round into a 9 or 10 cake pan. Fill with cheese mixture. Top with remaining dough. Crimp edges to seal.
6. Bake at 350 degrees for 1 hour. Serve warm or at room temperature.
