Salads: Black Bean and Corn Salad |

You may double or triple this for more servings. Excellent with home-baked tortilla chips. Ingredients:
1/4 cup corn |
1/4 cup black beans |
1/4 cup green pepper, chopped |
2 tablespoons pimientos, chopped |
1 tablespoon avocado, chopped |
2 tablespoons vinegar |
1 tablespoon olive oil |
1 tablespoon cilantro, chopped |
Directions:
1. Drain and rinse corn and beans well. 2. Combine corn, beans, green pepper, pimientos, and avocado in a bowl. 3. Drizzle with vinegar and oil. Stir in cilantro. 4. Chill if desired. |
