Ingredients:
choose 1 meat from the list below, or skip the meat altogether
1 cup diced ham
1 cup chopped crab meat (real deal or imitation)
1 cup diced poached chicken breast meat
1 cup diced bologna or mortadella sausage
4 large potatoes
2 large carrots
4 large garlic dill pickles
3 eggs
1 small can of green peas
1 small yellow onion
1 cup mayonnaise
1-2 tbsp yellow or brown mustard
Directions:
1. Cook carrots and potatoes with skin until done but still firm enough to be diced. The secret is to add some salt to water, cover, and cook slowly, so that vegetables don't become mushy
2. Drain the water and let cool
3. Hard boil eggs
4. The trick is to cut everything in a very uniform way - small dice.
5. Peel carrots, eggs and potatoes
6. Chop all choppable ingredients, add mayo and mustard and mix well, taking care not to mash anything.
7. Add salt and fresh chopped parsley to taste, if desire
8. Chill for 1-2 hours before serving
