We've challenged what traditionally defines a pizza by skipping the sauce and topping the crusts with a lightly dressed salad of mixed gourmet greens. These pizzas are fresh and delicious and easy to make at home. Ingredients:
1 (11-ounce) can refrigerated french bread dough |
cooking spray |
1/3 cup chopped green onions (about 2 onions) |
1 teaspoon dried basil |
1 1/2 tablespoons extra virgin olive oil |
1 1/2 tablespoons cider vinegar |
1/4 teaspoon black pepper |
dash of salt |
1 garlic clove, minced |
3 cups gourmet salad greens |
1 (3 1/2-ounce) package crumbled reduced-fat feta cheese with basil and tomatoes |
Directions:
1. Preheat oven to 350°. 2. Unroll dough; cut into 4 equal portions. Press each portion of dough into a 6 x 8-inch rectangle on a large baking sheet coated with cooking spray. Sprinkle evenly with green onions and basil, pressing gently into dough. Bake at 350° for 20 minutes or until crusts are crisp. Remove crusts from pan; cool 10 minutes on a wire rack. 3. Combine oil and next 4 ingredients in a large bowl, stirring with a whisk until well blended. Add greens, tossing to coat. Place crusts on individual serving plates; top evenly with salad. Sprinkle evenly with feta cheese. Serve immediately. |
