Description- Made for Craz-E Contest Salad Division- Category-Main Dish. For those crazy days when you need something nourishing for yourself or the family and just have time to grab and go….this is a great 1 hand meal to take along or send in a lunchbox. Out of desperation I started making salads to go but the lettuce wraps would always fall apart or turn funky around the edges. I decided to wrap them in tortillas, saran wrap and foil to take with me to work or appointments. These handy all in ones are a great tummy saver when you are hungry and need a pick up or need to be able to eat quick and well. Teachers do that all the tme-20 min. for lunch and usually less than that. This idea came in handy. Lunchbox friendly too as you can put a cool pack on them to keep cool for hours. Be inventive and versatile to your flavors. Cook time is wrapping time 10 min. for 4
Ingredients:
1 romaine lettuce hearts
1/4 lb baby shrimp, cooked
1/4 lb cheddar cheese
1 avocado, sliced into strips
1 large tomato, diced
4 radishes
1 teaspoon lemon juice
4 tortillas
salt and pepper
Directions:
1. Separate romaine hearts and slice thin strips.
2. Dice tomatoes, radishes, and set aside.
3. Slice avocado into strips and drizzle lemon juice over it.
4. Rinse shrimp and set aside.
5. Layer tortilla shells with above ingredients, top with your favorite dressing and roll into a tube. Remember to fold up bottom portion of tortilla so when you grab your salad to go it does not fall out as you bite inches.
6. This is a basic recipe- you can add in 1/4 lb peas in the pod, olive tapenade, pepperoni, hot or sweet bell peppers, or even chicken strips. It is the base for great pleasure that you can invent.
