I love this salad and have never made it at home - until I found the right mix of ingredients! It's fresh and easy and very tasty. I have always used tinned tuna but you could use fresh if you prefer. Ingredients:
600g chat potatoes |
300g fresh baby green beans, trimmed |
4 eggs |
425g tuna (or 350g fresh) |
250g grape tomatoes, halved |
90 g baby black olives |
dressing |
6 anchovy fillets |
1 tbspn dijon mustard |
1/3 cup red wine vinegar |
1/3 cup olive oil |
Directions:
1. Process all dressing ingredients until smooth, set aside. 2. Boil, steam or microwave potatoes and beans until tender, cut potatoes into quarters. 3. Boil eggs until medium soft. Peel and halve eggs. 4. If using fresh tuna cook until medium rare, cool and flake coarsely. 5. Combine potatoes, beans, tuna, eggs, tomatoes and olive in bowl and gently toss. 6. Dress to taste. |
