Salad-Filled Focaccia is exactly what the title suggests, but feel free to add or subtract ingredients to your taste. Ingredients:
2 1/2 cups mixed salad greens |
1/3 cup refrigerated presliced red onion |
3 tablespoons crumbled reduced-fat feta cheese |
1 tablespoon fresh lemon juice |
1 tablespoon extra-virgin olive oil |
1/8 teaspoon crushed red pepper |
1 (6-ounce) focaccia bread, cut in half horizontally |
Directions:
1. Combine first 6 ingredients in a large bowl, tossing well to coat. 2. Arrange salad on bottom half of loaf. Replace top half of loaf; cut crosswise into 4 equal portions. |
