This is a good recipe for home or taking to a picnic. Ingredients:
4 large potatoes |
15 ounces beets |
15 ounces corn |
3 large carrots, shredded |
1 small onion, chopped |
1 1/2 cups mayonnaise |
1 garlic clove, minced |
2 tablespoons oil |
2 tablespoons vinegar |
salt |
Directions:
1. Cook and dice potatoes. Dice the beets. 2. Put all ingredients into a large bowl. Make sure corn and beets are well drained. 3. Mix dressing ingredients in a small bowl with a wire whisk. Consistency should be like commercial bottled salad dressing. 4. Increase mayonnaise, if needed. 5. Pour dressing over salad and mix well. 6. Keep refrigerated until serving. 7. Optional ingredients: asparagus, eggs, and/or tomatoes. |
