Salad - Chickpeas and Spinach |

Tastey, easy and healthy! Increase portions for salad for multiple folks. Ingredients:
1/6 cup raw chickpeas (after cooking = 1/2 cup) |
1 cup chopped spinach |
1/3 cup chopped onion |
1/3 cup chopped red pepper |
1 tbs grated parmesan cheese |
5 small olives |
1 tsp balsamic vinegar |
Directions:
1. Cook chickpeas in a larger batch per your own instructions (I prefer no salt cooking in a pressure cooker). 2. Slice the olives. 3. Toss together ingredients. If not eating right away keep vinegar on the side until serving. |
