Have not tried this yet..but plan to Ingredients:
2 1/2 cups all-purpose flour |
1 cup mayonnaise |
1 cup sugar |
2 cups grated carrots |
3 large eggs, lightly beaten |
2 teaspoons vanilla extract |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 tablespoon cinnamon |
1 teaspoon salt |
2/3 cup raisins |
1 cup toasted pecans, chopped |
Directions:
1. preheat oven to 350*. 2. blend all ingredients in bowl, full thoroughly mixed.,divide batter into 2 greased 9x5 loaf pans - 3. Bake 1 hour - let cool 10 minutes. 4. then remove from pans to cool completley on wire rack. |
