This is particularly good with Low Fat Mousseline Mayonnaise Ingredients:
1 lb fresh asparagus, cooked |
3 carrots, julienne and blanched |
1/2 lb fresh mushrooms, sliced |
1/4 cup flavored mayonnaise or 1/4 cup salad dressing |
lemon juice, to taste |
salt and pepper, to taste |
Directions:
1. Cut asparagus into 1 inch pieces. 2. Combine with carrots and mushrooms,. 3. Season with salt and pepper. 4. Add mayonnaise and mix. 5. Add lemon juice if desired. |
