One of my favorite lunch spots in Houston was the cafe at Sakowitz. I would go with my Mother and have the soup du jour with assorted tea sandwiches and fruit salad with poppyseed dressing. One of the tea sandwiches was filled with this delicious ham salad. I tried to recreate this ham salad many times and finally got this right. Hope you like it as much as I do- Ingredients:
3 cups cooked ham, diced |
1/4 cup green onion, minced |
1/4 cup celery, minced |
1/4 cup mayonnaise |
1 teaspoon brown sugar |
1 teaspoon fresh lemon juice |
3 tablespoons parsley, minced |
freshly cracked black pepper |
1 teaspoon worcestershire sauce |
Directions:
1. Finely chop the ham in a food processor. 2. In a large bowl, mix all the ingredients together well. 3. Season to taste with pepper. 4. Spread on crackers or bread. |
