Saint Vincent Curried Goat |

Ingredients:
2 lbs lamb (or mutton trimmed and cut into cubes) |
1/4 cup onion, chopped |
2 tablespoons turmeric |
2 garlic cloves, chopped |
1 tablespoon hot pepper sauce |
2 teaspoons ginger, freshly grated |
1/2 cup red wine |
1/4 teaspoon cooking oil |
1/4 cup tomato ketchup |
1 teaspoon curry powder |
1/2 teaspoon salt |
1 teaspoon vinegar |
3 teaspoons chutney |
Directions:
1. Season meat with garlic, salt, vinegar and hot pepper. Allow to marinate for about 1 hour. 2. Heat oil, add curry powder, then the meat and brown. 3. Add remaining ingredients. 4. Cover and simmer over low heat 1 to 1 1/2hrs or until meat is tender then adjust seasoning to taste. 5. Serve on a bed of rice. |
