Delightful as a side salad...more than up to the task as a main dish salad. This isn't your run-of-the-mill broccoli salad. This has 2 pounds of bacon, and lots of other yummies... Ingredients:
3 bunches broccoli |
2 lbs crispy cooked bacon, crumbled |
3 ounces black olives, sliced |
1/2 cup pecans |
1/2 cup shredded monterey jack cheese |
1/2 cup shredded colby cheese |
1 cup parmesan cheese |
4 ounces pimientos, drained |
1/4 cup green onion, chopped |
1 cup ranch dressing |
4 tablespoons vinegar |
1/2 cup sugar |
Directions:
1. Trim and rinse broccoli florets. Put in bowl. 2. Add bacon, olives, pecans, cheeses, pimentos and green onions. 3. Whisk to combine dressing, vinegar and sugar. 4. Pour dressing mixture over salad. Toss to coat. 5. Refrigerate for at least one hour before serving. |
