A nice snack recipe from the Diana Liu cookbook. Ingredients:
2 lbs chow mein noodles |
1/4 lb shortening (butter, margarine or lard may be used) |
1 (10 ounce) package marshmallows |
1/2 cup honey |
1/3 cup brown sugar |
3/4 cup chopped peanuts |
3/4 cup toasted sesame seeds |
1/2 cup shredded coconut |
Directions:
1. Mix chow mein noodles, peanuts, coconut and sesame seeds in a large pot. 2. Melt shortening, marshmallows, brown sugar and honey over low heat; stir constantly until marshmallows are melted. 3. Cook 5 more minutes. 4. Pour mixture into noodle mixture; transfer chow mein mixture into a well greased 9x13 pan; press hard; let cool; cut into 2 squares. |
