Sage Roasted Mushrooms And Red Potatoes |

Sage is just a natural for both potatoes and mushrooms and it was perfect when I wanted something just a lil different from a more common roasted potato. The fresh sage added to the end of the cooking process adds a distinct full flavor, without being bitter. Read more . These are great served with pork, or would be good with poultry, too! Ingredients:
3lbs small red potatoes, halved |
24oz fresh mushrooms, whole |
1/4 cup olive oil |
3t butter, cut into pieces |
2t fresh sage, chopped and rubbed |
kosher or sea salt and fresh ground pepper |
Directions:
1. Pour half of oil into bottom of large oven safe pan.(I used my cast iron chicken fryer ) 2. Add potatoes 3. Season with salt and pepper, then add rest of oil 4. Toss well to coat potatoes. 5. Bake in 400 oven for about 45 minutes, stirring twice, until fork tender, but NOT falling apart. 6. Remove from oven and add mushrooms, sage and butter pieces and carefully toss to distribute. 7. Return to oven and continue roasting for about 10 more minutes. Mushrooms should be done, but not withered, and potatoes should be tender and cut edges should be browning. See Photo |
