A nice light summer salad with mandarin oranges and a vinegarette style dressing
Ingredients:
9 cups lettuce (i used a blend of mixed salad greens)
1 (11 ounce) can mandarin oranges
1/3 cup thinly sliced green onion
2 teaspoons unsalted sunflower seeds
6 tablespoons fresh orange juice
2 tablespoons honey
4 teaspoons minced shallots
4 teaspoons white wine, vingar
1 teaspoon dijon mustard
1/2 teaspoon salt
1/2 tablespoon orange zest
Directions:
1. 1. In a large salad bowl, gently toss the greens, mandarin oranges, green onions, and the sunflower seeds.
2. 2. Combine the dressing ingredients in a bowl and stir with a whisk.
3. 3. Pour over salad, toss, and serve.
