Combine high flavor and rich color by serving Saffron Rice along with Jerk Chicken for a memorable low-fat meal. Ingredients:
vegetable cooking spray |
1/2 teaspoon vegetable oil |
2 tablespoons chopped onion |
1/3 cup basmati rice, uncooked |
dash of saffron |
1 cup canned low-sodium chicken broth, undiluted |
3 tablespoons no-salt-added tomato sauce |
1/8 teaspoon salt |
1/8 teaspoon pepper |
1 tablespoon chopped fresh parsley |
Directions:
1. Coat a medium nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add onion; saute 3 minutes. Add rice and saffron; saute 2 minutes. Add chicken broth, tomato sauce, salt, and pepper; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender and liquid is absorbed. Sprinkle with parsley. |
