Ingredients:
vegetable cooking spray
1/2 teaspoon vegetable oil
2 tablespoons chopped onion
1/3 cup basmati rice, uncooked
dash of saffron
1 cup canned low-sodium chicken broth, undiluted
3 tablespoons no-salt-added tomato sauce
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon chopped fresh parsley
Directions:
1. Coat a medium nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add onion; saute 3 minutes. Add rice and saffron; saute 2 minutes. Add chicken broth, tomato sauce, salt, and pepper; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender and liquid is absorbed. Sprinkle with parsley.
