A World of Curries by Dave Dewitt and Arthur Pais. Ingredients:
4 tbs butter, or ghee |
1 cup rice |
2 cups stock (beef, chicken, or fish) |
1/4 tsp saffron or substitute 1/2 tsp ground turmeric |
1 cup raisins (optional) |
1/2 tsp cinnamon |
1 tsp brown sugar |
Directions:
1. Heat the butter or Ghee in a skillet and saute the rice over medium heat until it is golden-brown, about 8 minutes. Add the stock and bring to a boil. 2. Immediately remove from the heat and stir in all the remaining ingredients. Transfer to a ceramic baking dish and bake, covered, at 350 degrees for 45 minutes. For a crispier rice, remove the cover during the last 15 minutes. |
