A different taste to chicken wings. From Pol Martin Cookbook Ingredients:
2 tablespoons olive oil |
2 lbs chicken wings |
1 large onion, chopped |
2 garlic cloves, smashed and chopped |
1 red pepper, sliced |
1 1/2 cups fresh tomatoes, chopped |
2 tablespoons tomato paste |
1/2 teaspoon saffron |
1/2 teaspoon basil |
1 cup chicken stock |
1 pinch crushed red pepper flakes |
salt |
black pepper |
Directions:
1. preheat oven to 350*F. 2. heat oil in ovenproof saute pan over med heat. add chicken wings and season. cook 6 minutes on each side. remove wings from pan ans set aside. 3. add onion and garlic to hot pan, cook 4 minutes over med heat. add red pepper, tomatoes, and tomato paste. season, mix well and add seasonings, except crushed chillies. 4. mix again and cook 5 to 6 minutes over med heat. 5. pour in chicken stock, return chicken wings to pan and sprinkle in crushed chilies. 6. mix, cover and cook 18 to 20 minutes in oven. |
