Safari Pizza With Harissa |

Pizza the African way! If you do not have berbere or harissa, there are many recipes for both here on RecipeZaar. Ingredients:
1 pre-baked pizza crust (such as boboli) |
2 teaspoons berbere |
1 teaspoon garlic, minced |
1/4 teaspoon salt |
2 tablespoons olive oil |
1 medium chinese eggplant, sliced thick |
1 small zucchini, sliced thick |
1 small red onion, sliced thick |
2 tablespoons olive oil |
1 tablespoon harissa |
1 chorizo sausage, sliced |
6 ounces mozzarella cheese, sliced |
Directions:
1. Mix berbere, garlic and salt with olive oil. Coat top of pizza crust with oil mixture; set aside. 2. Prepare topping: 3. Place vegetables in a roasting pan; lightly toss with olive oil and harissa to coat. 4. Roast vegetables for 15-20 minutes. 5. Remove from oven and let cool. 6. Arrange cheese, sausage and vegetables on pizza crust. 7. Bake in preheated oven at 350°F for 10 minutes. 8. Remove from oven and serve hot. 9. Sprinkle with more harissa if desired. |
