vegetable curry
Ingredients:
1 onion, small, chopped
1 potato, medium, chopped
2 carrots, large, sliced
1 stalk celery, medium, sliced
1/2 cup peas
1 pepper, hot chili, green
1 block tofu, extra firm
2 cups broccoli
2 tbs ginger root, chopped
1 clove garlic, chopped
1/4 tsp salt
1 cup water
1 tbs black pepper
2 tbs garam masala
1/8 cup olive oil
Directions:
1. Heat oil on medium high in large pot.
2. Fry onion 2 minutes.
3. Add spices (can also include black mustard seeds, fenugreek, cinnamon, coriander, cloves, turmeric), ginger, garlic, and chili pepper.
4. Add potato and fry 2 minutes. Lower heat to medium.
5. Add remaining vegetables and stir for 2 minutes.
6. Add cubed tofu and water; stir gently. Raise heat to high, bring to boil, lower heat to medium high, and simmer covered 10 minutes.
