vegetable curry Ingredients:
1 onion, small, chopped |
1 potato, medium, chopped |
2 carrots, large, sliced |
1 stalk celery, medium, sliced |
1/2 cup peas |
1 pepper, hot chili, green |
1 block tofu, extra firm |
2 cups broccoli |
2 tbs ginger root, chopped |
1 clove garlic, chopped |
1/4 tsp salt |
1 cup water |
1 tbs black pepper |
2 tbs garam masala |
1/8 cup olive oil |
Directions:
1. Heat oil on medium high in large pot. 2. Fry onion 2 minutes. 3. Add spices (can also include black mustard seeds, fenugreek, cinnamon, coriander, cloves, turmeric), ginger, garlic, and chili pepper. 4. Add potato and fry 2 minutes. Lower heat to medium. 5. Add remaining vegetables and stir for 2 minutes. 6. Add cubed tofu and water; stir gently. Raise heat to high, bring to boil, lower heat to medium high, and simmer covered 10 minutes. |
