From p. 153, Vegan Fire & Spice (2008) - Robin Robertson Ingredients:
1 pound spinach |
2 tablespoons canola oil |
1 garlic clove |
1 tsp grated fresh ginger |
2 tsp curry powder |
1/2 tsp cayenne |
1/2 cup finely chopped tomatoes |
1/4 cup coconut milk |
Directions:
1. steam spinach til wilted, 2 minutes. Finely chop spinach 2. put oil in pan. add garlic, curry powder and cayenne, cook for 1 minute. Add tomatoes and salt to taste and cook for 5 min. Stir in spinach and simmer till mixture is hot and flavors are well blended, about 10 min. |
