Ingredients:
1 pound spinach
2 tablespoons canola oil
1 garlic clove
1 tsp grated fresh ginger
2 tsp curry powder
1/2 tsp cayenne
1/2 cup finely chopped tomatoes
1/4 cup coconut milk
Directions:
1. steam spinach til wilted, 2 minutes. Finely chop spinach
2. put oil in pan. add garlic, curry powder and cayenne, cook for 1 minute. Add tomatoes and salt to taste and cook for 5 min. Stir in spinach and simmer till mixture is hot and flavors are well blended, about 10 min.
