Just my basic Sticky Date Pudding recipe. I had to make 8 of these for a show at our local bowling club once. Pretty much fool-proof. They freeze good too. Ingredients:
200g chopped dried dates |
1 1/4 cups water |
1 tsp bi-carb soda |
60g butter, room temp. |
1/3 cup caster sugar |
2 eggggs |
1 cup self-raising flour |
**** for the sauce |
1 cup brown sugar |
1 cup cream |
200g butter, cubed |
Directions:
1. Preheat oven to 180C and line a 20cm round cake tin. 2. In a small saucepan, combine dates and water, bring to the boil. Remove heat and add bi-carb. Allow to cool. 3. In a large bowl, use electric beaters to combine butter and sugar, then the eggs, one at a time. 4. Fold in the self-raising flour, then the dates. 5. Put batter in the cake tin and bake for 55 minutes. 6. While the puddin's doing its thing, make the sauce; Just combine all the sauce ingridients in a medium saucepan till its all smooth and melted together. 7. When the Pudding's 55 minutes is up, pour 1/4 cup of the sauce over the top and bake for another 5 minutes. 8. Serve with icecream and more sauce. |
