This is a great appetizer. People who don't like rye bread like it. Those who don't like black olives like it. I have never taken it somewhere new that I haven't been asked for the recipe. It's been a standard for my family and friends for over 30 years now. Ingredients:
2 c. shredded sharp cheddar cheese (cracker barrel suggested) |
1 small onion, grated or finely chopped. |
1/2-3/4 cup mayonnaise (helmann's suggested, do not use miracle whip) |
1 can sliced black olives |
1 lb. bacon |
1 loaf cocktail rye bread |
Directions:
1. Preheat oven to 350 2. With scissors, cut across entire package of bacon, into 1 inch pieces 3. Fry until crisp and place on paper towels to drain 4. Do not use bacon bits, it's just not the same 5. Mix cheese, onion, mayo and olives 6. Spread cheese mixture on cocktail rye bread, place on cookie sheet 7. Sprinkle each slice with bacon pieces 8. Bake on middle rack for 15-20 minutes 9. Serve while hot, they won't last long! |
