Rustic Dried Cherry Salad |

Quite a unique salad using toasted bread cubes, dried cherries and curry powder with a raspberry vinaigrette. Ingredients:
3 cups french bread, cubed |
1/4 cup pecans, chopped (or walnuts) |
1/2 cup dried cherries, chopped |
1 stalk celery, trimmed and diced |
3 tablespoons canola oil |
3 tablespoons raspberry vinegar |
1 tablespoon honey |
2 tablespoons water |
1/4 teaspoon curry powder |
Directions:
1. Preheat oven to 350 degrees. Spread bread cubes on baking sheet; bake 15 minutes or until toasted. Cook completely. Set aside. 2. Toast pecans in a medium skillet over medium heat 3 minutes, stirring frequently. 3. Combine pecans, cherries, celery and bread in a large bowl. Combine oil, vinegar, honey, water and curry powder in a cup. Stir well. Pour over salad and toss. Serve immediately. |
