Outside of Russia, this salad is called Russian. Its often made with the addition of pickled or salted herring. Ingredients:
2 cups potatoes, peeled, diced and cooked |
2 cups carrots, peeled, diced and cooked |
1 cup tart apple, peeled and diced |
1 cup dill pickles, minced |
1/3 cup onion, minced |
2 cups beets, cooked, peeled and diced |
2/3 cup heavy cream, whipped or 2/3 cup sour cream |
2 tablespoons fresh lemon juice or 2 tablespoons cider vinegar |
1 dash salt, sugar and freshly ground black pepper |
egg, hard-boiled, sliced |
Directions:
1. Place first 3 ingredients in large salad bowl and chill. 2. Combine all dressing ingredients and chill. 3. Add the beets to salad bowl just before serving and mix gently. 4. Serve dressing on side, mounded on salad or mixed into salad ingredients just before serving. 5. Garnish with eggs, if desired. |
