RUSSIAN RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gore Estate in Justin, Texas in 1986. Ingredients:
2 ounces butter |
10 ounces long grain rice washed soaked in cold water for 30 minutes and drained |
1/2 teaspoon ground ginger |
1-1/2 teaspoons sesame seeds |
1 pint chicken stock |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
2 ounces slivered toasted almonds |
Directions:
1. Preheat oven to 350. 2. Melt butter over moderate heat then add rice and cook 10 minutes stirring constantly. 3. Add ginger and sesame seeds then cook for 3 minutes. 4. Pour in the stock, salt and pepper and bring to boil stirring constantly. 5. Put in casserole dish then place in oven and bake uncovered for 35 minutes. 6. Toss rice with a fork after 10 minutes and again after 20 minutes. 7. Taste and add more salt if necessary then sprinkle with almonds and serve immediately. |
