Different spin on honey cakes with dark tea and lemon and honey Ingredients:
1/2 c sugar |
2 eggs, well beaten |
3/4 c honey |
2 tb oil |
1/2 c hot dark tea |
2 tb whiskey |
2 c sifted flour |
1 ts cinnamon |
1/2 ts baking powder |
1/2 ts baking soda |
3/8 c chopped nuts |
grated rind of one lemon |
Directions:
1. Mix all ingredients together and beat well. 2. Pour into greased loaf pan which has been lined with waxed paper on the bottom. 3. Bake at 325 degrees for 45 minutes to an hour or until tested done. 4. if browning too fast, cover with foil last 15 minutes of baking 5. Cool completly 6. wrap overnight before slicing 7. freezes well |
