1. lb Boneless Skinless Chicken thighs 2. (actually, it’s up to you - I prefer thighs, but 3. you can use any other chicken pieces you 4. want. Sometimes I substitute other types if I 5. can’t find the boneless and skinless. The key 6. is to remove the skin either way) 7. oz Bottle of Russian Salad Dressing 8. (or two smaller 8 oz bottles) 9. oz Jar Apricot-Pineapple Preserves 10. Packet of French Onion Soup/Dip Mix 11. -2 cups white rice (or brown if you prefer) 12. Preheat Oven to 375° 13. Combine Russian Dressing, Pineapple 14. Preserves (use about 2/3 the jar), the package 15. of French onion soup mix, and stir well. 16. Place Chicken in a glass baking pan and 17. pour the sauce over it. Cover with foil and 18. cook at 375° for about an hour. Remove the 19. foil about 10 minutes before it’s done. 20. Serve over cooked rice and add your 21. favorite veggie or salad. 22. This recipe can easily be altered to taste — 23. or doubled if you want to make more. It’s 24. great for leftovers too. |
