I used to buy this bread from a local specialty bread store. No More ! This is outstanding. Moist, earthy, and robust. You will have to forgive me. I adapted this recipe from a bread machine recipe that said Put ingredients in machine and turn on. Read more . Ingredients:
1 1/2 cups water |
2 tablespoons cider vinegar |
2 1/2 cups bread flour |
1 cup rye flour |
1 teaspoon salt |
2 tablespoons margarine |
2 tablespoons dark corn syrup |
1 tablespoon brown sugar |
3 tablespoons unsweetened cocoa powder |
1 teaspoon instant coffee granules |
1 tablespoon caraway seed |
1/4 teaspoon fennel seed (optional) |
2 teaspoons active dry yeast |
Directions:
1. Combine water ( approx 110 deg F ), dark corn syrup, and yeast. Let set and allow to bloom. ( about 5 min. ) 2. While waiting for yeast to bloom combine the rest of the dry ingredients. Measure out vinegar and set aside. 3. Once yeast has bloomed and developed a foam, put in mixer bowl. At this point add the vinegar. Use dough hook and begin adding dry's about a cup at a time until fully combined and developed a smooth ball. Put in a large lightly oiled bowl and allow to rise until doubled in size. 4. Once risen, take from bowl. Punch down and knead for about 3-5 minutes. Form into a loaf shape. Place in a greased loaf pan and allow to rise again about 45-min to a hour. Then bake in a 350 deg oven for 30 to 45 min. |
