I learned to make these when I was a teenager and working short order at Russ' Lunch.....He taught me a lot about breakfast cooking and for that I honor him with this post Ingredients:
3 eggs |
2 tbls. milk |
1/4 cup ham, diced |
pepper and onion, chopped and as much as you like |
2 slices american cheese |
4 slices wheat bread |
salt and pepper to taste |
butter to cook |
Directions:
1. Put eggs and milk in bowl and beat vigorously until it foams 2. Add ham, onion and peppers and mix together 3. Heat large skillet with butter to medium heat 4. Add egg mixture to skillet 5. Tilt pan and with spatula pull mixture away from edge of pan to let mixture move to pan surface 6. Turn heat to low and let cook until golden brown 7. Flip over 8. Top with cheese 9. Put lid on skillet and let cook until golden brown 10. Toast bread 11. Half egg and put onto toast 12. Top with other slice 13. Love a dash of hot sauce on it. |
