I made this salad last weekend as soon as my friend reminded me she was coming over. I pulled out most of the veggies in the fridge and some pasta. The result, a very refreshing and satisfying salad! Ingredients:
1 lb spiral shaped pasta |
10 -15 broccoli florets |
5 mushrooms, chopped |
3 garlic cloves, minced |
1/2 medium onion, chopped |
1 cup fresh spinach |
1 large tomato, cut in wedges |
1 small green pepper, chopped |
1/2 cup balsamic vinegar |
1/4 cup olive oil |
2 tablespoons white truffle oil |
Directions:
1. Boil pasta. 2. Place pasta and veggies in large bowl. 3. Add vinegar and oils, toss 4. Refrigerate and serve. |
