This is a Scottish version of Bubble and Squeak. Ingredients:
16 ounces potatoes, boiled, and mashed |
12 ounces cabbage, finely shredded |
1 large white onion, sliced finely |
4 tablespoons butter |
1 cup white cheddar cheese, grated |
1 teaspoon nutmeg, grated |
Directions:
1. Preheat oven to 375°F. 2. Boil and mash potatoes, and set aside. 3. Shred cabbage and slice onion, set aside. 4. Place butter in a frying pan and set on high heat and melt. 5. Add the cabbage and sliced onion,and turn so that the cabbage and onion are coated evenly, and leave till both are wilted; but not burned. 6. Add roughly half the cheese and all the potatoes, stirring so that everything is incorporated. 7. Season with salt and pepper. 8. Place in a corningware serving dish and sprinkle with the remaining cheese. 9. Sprinkle nutmeg over the top. 10. Place in a hot oven and bake until the cheese has melted and is golden brown on top. 11. Serve immediately. |
