Here is a wonderful treat for everyone, it can also be a very nice dessert in the summertime, after those salad dinners - served chilled. Ingredients:
1/2 cup molasses |
1/3 cup sugar |
1/2 cup water |
3 tablespoons lemon juice |
2 tablespoons rum or 1 teaspoon rum extract |
5 large peaches, peeled, pitted and halved |
Directions:
1. Combine molasses, sugar, water, lemon juice and rum in 10-inch skillet. Simmer 5 minutes. Add peach halves; allow mixture to come to a simmer again. Cover, cook 10 minutes or until just tender, serve warm or chilled with ice cream. 2. If desired, 1 can (28 oz) peach halves may be substituted for fresh peaches. Substitute peach syrup for water and reduce sugar to 3 tablespoons. |
