Rum Spiked Grilled Pineapple |

Succulent pineapple, brushed with a rum, brown sugar glaze and served with a sprinkle of coconut and ice cream....great summer treat! Recipe and photo from BBQ Grilling Ingredients:
1 pineapple, peeled, cored, halved lengthwise and sliced into 12 wedges (about 1 1/2 lbs) |
2 tbl butter, melted |
1/4 c packed light brown sugar |
1/4 c dark rum (capt. spiced would be good too) |
1/4 tsp ground cinnamon |
cooking spray |
flaked, sweetened coconut, toasted (optional) |
vanilla light ice cream(optional) |
Directions:
1. Prepare grill 2. Brush pineapple wedges with 2 Tbl butter 3. Combine brown sugar, rum and 1/4 tsp cinnamon in a microwave safe bowl 4. Microwave on high 1 1/2 minutes or until sugar dissolves 5. Place pineapple on grill rack coated with cooking spray 6. Grill 3 minutes each side or until grill marks form and heated through 7. Top with toasted coconut and serve with ice cream if desired 8. 6 servings (2 wedges) |
