Creamy and sweet, Rum-Raisin Rice Pudding is a comforting sweet ending to your meal, plus our version stirs up super quick. Ingredients:
2 cups unseasoned hot cooked long-grain white rice simmered in water |
1/2 cup raisins |
1/4 cup rum |
2 (3.5-ounce) vanilla pudding snack cups |
1/3 cup toasted sliced almonds |
1/4 teaspoon ground cinnamon |
dash of ground nutmeg |
Directions:
1. Start with hot cooked rice simmered in water. Combine raisins and rum in a microwave-safe bowl. Microwave at HIGH 2 minutes; let stand 5 minutes. Stir raisin mixture, vanilla pudding, almonds, cinnamon, and nutmeg into rice. |
