This is delicious...........great on.... ice cream........fresh fruit or cheesecakes........ courtesy of caribbean part cookbook Ingredients:
2 - cups of sugar |
1/2 - cup water |
3/4 - cup heavy cream |
2- tablespoons dark rum |
2 - tablespoons cointreau or curacao |
Directions:
1. combine sugar and water in medium saucepan and stir well. 2. heat over medium - low heat until sugar dissolves. 3. increase heat to medium and bring to a boil, swirling pan gently to avoid scorching, until sugar caramelizes ( turns golden brown) about 10 minutes. 4. remove pan from heat and gradually stir in heavy cream ( mixture will bubble rapidly) and return to low heat, stirring constantly until smooth....... 5. remove from heat and whisk in rum and liqueur. 6. cover and cool slightly. 7. sauce can be refrigerated and reheated over low heat....... enjoy |
