Rum Glazed Mincemeat Muffins |

This recipe was passed on to me by an acquaintance, but I believe it originally came from the internet. Ingredients:
1 1/2 cups all-purpose flour |
1/4 cup granulated sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
1/2 cup unsalted butter, melted |
1/2 cup apple juice |
2 eggs |
1 cup mincemeat |
1 teaspoon granulated sugar |
1/4 cup rum |
Directions:
1. Preheat oven to 375 degrees F. 2. FOR THE MUFFINS: Whisk together flour, sugar, baking powder & salt. 3. In another bowl, Stir apple juice & eggs into melted butter, mixing well. 4. Stir butter mixture into flour mixture. 5. Add mincemeat & stir until moistened. 6. Spoon into muffin cups. 7. FOR THE GLAZE: Mix sugar & rum. 8. Brush over top of each muffin before baking. 9. Bake 15-20 minutes. |
