10 of 10 of my Christmas candy recipes. My brother-in-law has narcolepsy, an illness where you randomly fall asleep during day-to-day activities. I'm not lying, he can fall asleep standing up - we rib him about it a little, but we try to be accommodating. Read more . As a result, he can't have much alcohol, because it makes him really sleepy. These were a special request of his, so he could taste a hint of rum, but not suffer the after-effects. I found a bunch of recipes for rum balls, combined my favorite things out of each one and I came up with what we all thought was a pretty good rum ball. Enjoy! Ingredients:
2 c. finely-crushed vanilla wafers |
1 1/2 c. confectioner's sugar, divided |
1/2 c. walnuts, toasted and chopped fine |
1 tbsp. cocoa powder |
1/4 tsp. allspice |
1/4 c. plus 1 tbsp. dark rum |
1/4 c. dark corn syrup |
2 tbsp. butter, melted |
Directions:
1. ***Cook time is standing time.*** 2. Reserve 1/2 c. confectioner's sugar for rolling shaped candies. 3. Combine remaining sugar and remaining ingredients in a large bowl and knead together. 4. Roll into 1 inch balls and roll in remaining confectioner's sugar. Arrange rum balls on a baking sheet and cover with plastic wrap. Let sit for 48 hours before serving/storing. |
