Ruby Port Pork Tenderloin Marinade |

Rich marinade for pork tenderloin made with a sweet port and cinnamon. The sweetness of the port offsets the salty soy and is the perfect companion for tenderloin. Ingredients:
2 lbs pork tenderloin |
2 tablespoons soy sauce |
2 tablespoons ruby port |
1 tablespoon peanut oil |
2 tablespoons honey |
1 tablespoon light brown sugar |
3/4 teaspoon adobo seasoning (goya powdered seasoning) |
1/2 teaspoon cinnamon |
Directions:
1. Combine ingredients and marinate in a one gallon freezer bag overnight. Heat 2 T. of peanut oil to medium-high heat in a cast iron skillet and sear all sides of the tenderloin. Transfer the skillet to a 425 degree oven for 20 minutes (or until 145 degrees internal temperature). Remove from the oven, tent with foil for 15 minutes, and serve. |
