I just found this in my email box, its from Fruits & Veggies More Matters. It sure looks good. I bet Strawberries would be good in place of cherries until they come into season! Ingredients:
dressing |
1/3 cup orange juice |
2 tbs olive oil |
2 tbs honey |
1/2 tsp salt |
ground black pepper to taste |
1 bag baby spinach or mixed greens |
3 cups sweet cherries, pits removed |
2 cups sliced english cucumber |
1/2 finely diced red onion |
Directions:
1. Wisk together orange juice, oil, honey, salt and pepper; set aside. 2. In a large bowl, combine salad ingredients. 3. Toss with salad dressing and serve immediately. 4.
