Royal Icing dries to a smooth, hard finish as opposed to other frostings in this chapter. Royal Icing works well to make hard, candylike decorations or to add a hard glaze to cookies, but it isn't a good choice for frosting entire cakes. It dries quickly, so keep it covered with a damp cloth while working with it. Ingredients:
1 (16-ounce) package powdered sugar, sifted |
3 tablespoons meringue powder |
6 to 8 tablespoons warm water |
paste food coloring |
Directions:
1. Beat first 3 ingredients at low speed with an electric mixer until blended. 2. Beat at high speed 4 to 5 minutes or until stiff peaks form. If icing is too stiff, add additional water, 1/4 teaspoon at a time, until desired consistency. 3. Color icing as desired with food coloring. 4. Note: Find meringue powder at craft stores and cake decorating stores. |
