Two types of meat and because it's made in a slow cooker it's a great choice for casual Christmas gatherings. Ingredients:
2 lbs lean ground beef |
1 1/2 lbs beef flank steak, cubed |
1 medium onion, chopped |
1 celery rib, chopped |
29 ounces tomato sauce |
29 ounces diced tomatoes, undrained |
16 ounces kidney beans, rinsed and drained |
15 ounces pinto beans, rinsed and drained |
4 ounces green chilies |
2 -3 tablespoons chili powder |
3 teaspoons ground cumin |
2 teaspoons salt |
2 teaspoons pepper |
1/2 teaspoon ground mustard |
1/2 teaspoon paprika |
1/2 teaspoon cayenne pepper |
1/4 teaspoon garlic powder |
hot pepper sauce |
cheese, shredded |
onion, additional chopped |
Directions:
1. In a large skillet, cook the ground beef, flank steak, onion, and celery over medium heat until meat is no longer pink and drain. 2. Transfer to a 6-quart slow cooker. 3. Stir in the tomato sauce, tomatoes, beans, chilies, and seasonings. 4. Cover and cook on low for 6 to 8 hours. 5. Serve with hot pepper sauce, cheese, and onion if desired. |
