Rouladen is very German despite the French sounding name. Rouladen beef is cut form the top or bottom round. But if your butcher doesn't know that find a new butcher. Ingredients:
2 slices rouladen meat (abt 1/2 pound each) |
salt & pepper |
german mustard |
4 slices bacon, uncooked |
4 tbsp chopped onion |
4 tbsp chopped dill pickles |
butter |
Directions:
1. Salt and peper each slice of meat and cover with mustard. 2. Lay bacon strips lengthwise over meat and sprinkle with onions and pickles. 3. Roll tightly (as a jelly roll) and skewer. 4. Brown on all sides in butter. 5. Put in a pot and cover with water. Simmer for an hour. 6. Add water as needed to keep meat covered while cooking. 7. Thicken the final broth with a roux to make the gravy. |
