This recipe is from Hotel Sacher ( yeah, the same Hotel, that makes the cake ), the most famous Hotel and restaurant in Vienna, Austria. Onions are caramelized in sugar, than cooked with red cabbage, vinegar and spices. Read more . At the end, some currant marmalade is added. I works very well with all kinds of roasts (Sauerbraten Rheinische Art From Cologne ) , duck or goose. Ingredients:
1 kg red cabbage, cored and cut into very fine slices |
60 gr. sugar |
2 onions, peeled, halved, than cut lengthwise into slivers |
2 or 3 tb vinegar ( i use apple cider vinegar and apple balsamico ) |
1/4 c water |
2 cloves |
1 tb caraway seed |
salt |
3 tb currant marmalade or cranberry sauce |
Directions:
1. In a heavy, wide pot let the sugar melt and caramelize to a light brown. Add the onions and cook, until soft, 6 min. add vinegar and cook a couple seconds, stirring. Than add the cabbage, spices and water. Cover and cook on low for about 45 min., until the cabbage is cooked and tender. add marmalade, stir and adjust seasonings. 2. Leftovers freeze an reheat very well. |
