I like Rotel chili mix, but I wanted to spice it up a bit, add some flavors and heat. I won a chili cook off with this recipe. Ingredients:
1lb 80-85% lean beef |
1 can rotel chili mix |
1 can rotel hot |
1 large can tomato sauce |
2 fresh diced garlic cloves |
1/4 cup pickled jalapenos |
2 tbs pickled jalapeno juice |
1 tbs vegetable oil |
Directions:
1. Put the oil in a large saucepan over medium-high heat 2. Add garlic and cook for one minute 3. Add beef and cook until browned 4. Put Rotel hot, jalapenos and jalapeno juice into a food processor and mix on high until thoroughly broken down - don't use a blender as that will mix it too finely 5. When beef is browned, add in Rotel chili mix, blended Rotel hot and tomato sauce 6. Simmer on medium-low for 10 minutes 7. Serve with grated cheddar and tortilla chips |
