Rosy Maple Salad Dressing

When blood oranges are in season we often buy a case of them which prompts me to invent new ways to use them before the kids gobble them up. This light salad dressing has a beautiful rosy color from the blood orange juice. It works well with green salads but would also be nice on a chicken salad.
Ingredients:
1/4 cup maple syrup
1/4 cup honey
1/4 cup apple cider vinegar
1/2 cup canola oil
1/4 teaspoon red pepper flakes
1/8 teaspoon ground cardamom
1 blood orange, juiced (if you don't have blood oranges, you can substitute a regular orange. the dressing won't be a rosy c)
salt and pepper
Directions:
1. In a medium bowl, mix together the maple syrup, honey and vinegar.
2. Slowly add the oil whisking constantly.
3. When all the oil is incorporated, add the red pepper flakes and the cardamom.
4. Whisk in the blood orange juice.
5. Taste and season with salt and pepper to your liking.
