Beets make for a wonderful corlorful and tasty pancake. And sour cream and chive make a great topping unusal but differently delicious
Ingredients:
4 good-sized beets
4 tbs flour or enough to bind
3 tbs cream
2 eggs
1 tsp salt
1/4 tsp pepper
Directions:
1. Prep time does not include beet cooking time
2. Boil beets, rub off skin, and mash to a smooth pulp.
3. Blend cream,eggs, salt, and pepper.
4. Mix in beets and enough flour to bind mixture
5. Cook like pancakes in a hot greased pan.
6. Serve with sour cream and chives
